Artichoke Squares
A great appetizer to serve at your next family gathering!
Ingredients
2 jars (6 ounces each) marinated artichoke hearts
1 onion, finely chopped
2 cloves garlic, minced
4 eggs, beaten
1/4 cup dry breadcrumbs
2 cups shredded cheddar cheese
1/4 teaspoon dried oregano
Salt and pepper, to taste
Directions
Drain one jar of the artichokes; add marinade to a skillet. Drain other jar of artichokes and reserve for another use. Dice artichokes. Set aside. Add onion and garlic to marinade. Cook until onion is soft. Remove from heat. Stir in artichokes. Add eggs, breadcrumbs, oregano, salt and pepper. Fold in cheese. Pour into a lightly greased baking dish and bake at 325 degrees for about 30 minutes. Remove from oven and cool. Cut into small squares.
Suggestions
Reserved marinade can be used to saute vegetables, as a salad dressing or to marinate meat or chicken.
