Banana Bars
Ingredients
1 large banana
1/2 cup margarine, softened
1/2 cup brown sugar
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1 egg
1 cup flour
1 teaspoon baking powder
1/2 cup chopped nuts, optional
Directions
In a large bowl, beat the banana with an electric mixer until smooth. Add the margarine, sugars, cinnamon and vanilla. Mix well. Beat in the egg. Stir in the flour and baking soda. Fold in nuts. Spread this mixture evenly into a greased 13x9-inch baking pan and bake at 350 degrees F for about 25 minutes. Cool and cut into bars. Makes about 30 bars.
Suggestions
Serve with a glass of milk for a quick after school snack.
