Chocolate Peanut Butter Muffins

Chocolate muffins filled with delicious peanut butter chips.
Ingredients
1/2 cup quick-cooking oats
1/4 cup margarine, softened
1/2 cup applesauce
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla extract
3/4 cup flour
1/4 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1 cup peanut butter baking chips
Directions
In a large bowl combine the margarine, sugars, egg and vanilla. Blend until well combined. Add the applesauce and oatmeal and blend again. Stir in the flour, cocoa powder, baking soda and cinnamon. Stir until just blended. Fold in peanut butter chips.
Line muffin tins with paper liners, then fill 3/4 full with batter. Bake at 350 degrees F for about 23 minutes. Cool slightly, then remove from pan.
Suggestions
Serve with a glass of milk for a delicious after school snack.
