Freezer Pickles
A delicious snack to serve at your outdoor barbecue or picnic.
Ingredients
4 pounds pickling cucumbers, sliced
7 cups thinly sliced onions
1 cup small cauliflower florets, optional
1/4 cup salt
3/4 cup water
4 cups sugar
2 cups apple cider vinegar
Directions
Combine the cucumbers, onions, cauliflower, salt and water in one or two large bowls. Let them stand at room temperature for about two hours. Add the sugar and vinegar and stir until the sugar dissolves. Pack into freezer containers. Cover and freeze. Before serving, let the pickles thaw at room temperature for about four hours.
Suggestions
For a change, try adding different spices to the pickles before freezing such as rosemary, dillweed or parsley.
