Fruity Energy Balls
Ingredients
1/4 cup pitted dates
1/4 cup pitted prunes
1/4 cup dried apricots
1/4 cup dried figs
1/3 cup corn flakes
1/4 cup honey
1/2 square unsweetened chocolate, melted
Coconut or chopped pecans
Directions
Bring about 2 cups of water to a boil. Turn off heat and add the prunes and apricots. Allow to sit for five minutes, and then drain well.
Place all the fruits in a blender or food processor. Pulse until smooth. Pour into a bowl and stir in the corn flakes, honey and melted chocolate. Form into balls and roll in either chopped pecans or coconut. Cover with plastic wrap and refrigerate at least one hour before serving.
