Healthy Spinach Pesto Dip
Ingredients
1 cup cottage cheese
1/2 of a 10-ounce package frozen chopped spinach, thawed and squeezed dry
1/4 cup loosely packed fresh basil leaves
2 garlic cloves, minced
1/8 cup chopped onion
2 tablespoons freshly grated Parmesan cheese
Pepper, to taste
Directions
Put all the ingredients into a blender or food processor. Pulse until desired consistency. Cover and chill at least two hours before serving.
Suggestions
Serve with crackers, cut up vegetables or breadsticks.
