Hummus
Garbanzo beans take center stage in this delicious spread.
Ingredients
2 cans (15 ounces each) garbanzo beans, drained
1/2 cup tahini*
1/4 cup lemon juice
1 teaspoon finely grated lemon zest
3 cloves garlic, minced
1/4 cup flat-leaf parsley
1/4 cup chopped green onions
Salt and pepper, to taste
Directions
Combine the garbanzo beans, tahini, lemon juice and zest, garlic, parsley and green onions in a blender. Process until smooth, then season with salt and pepper to taste. Water can be added to thin the hummus to the desired consistency.
Suggestions
Serve as a spread for crackers, or as a dip for vegetables.
*Tahini can be found in the Asian section of most grocery stores.
