New York Basil Dip
Naina Ayya
A healthy dip made from tofu.
Ingredients
3 cups firm tofu, at room temperature
1 to 2 bunches fresh basil, trimmed of stems and finely chopped
1/2 cup olive oil, safflower oil, or blend
3 to 4 cloves fresh garlic, smashed
Ground black pepper
Sea salt
Whole-wheat crackers or pita bread pieces, warmed
Optional: 3 tablespoons ground toasted sesame seeds or prepared hummus to improve consistency and taste
Directions
In a blender, add the tofu which as been cubed and pressed free of as much water as possible. Blend until it's paste-like. Add the basil and oil. Add the spices and ground sesame seeds or hummus, if desired. Blend on high until it has the consistency of hot oatmeal or hummus.
Suggestions
Serve in a bowl on a platter with a selection of crackers or of softer pita bread. Some like to toast the pita and brush it with soy margarine before serving.
