Sugar Cookies

3 cups all-purpose flour
1 teaspoon baking soda
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 teaspoon vanilla extract
1 egg
Optional: icing, colored sugar, or other cookie decorations

Sift together the flour and baking soda; set aside. In a large bowl, beat the butter, sugar and vanilla until creamy. Add the egg and beat until light and fluffy; gradually blend in the flour mixture. Divide the dough in half; wrap in plastic wrap and chill for one hour in the refrigerator. On a floured surface, roll half the dough to 3/16-inch thickness. With a floured cookie cutter, cut out the cookies. Roll out remaining dough, re-rolling scraps as necessary. Place the cookies on ungreased baking sheets. Bake at 375 degrees F for 8 to 10 minutes or until light golden. Remove to wire rack to cool. Decorate with icing and other items as desired.

Serve with milk, tea, coffee or your favorite beverage.

If you want to decorate the cookies with colored sugar, first brush each unbaked cookie with a little beaten egg white, then sprinkle with the colored sugar before baking.
