Green Chili Stew
Brad Powell
Brad Powell, iParenting's Dad of the Month, jokes that even though it's a little spicy, he's trying to indoctrinate his two young children into "the chili club."
Ingredients
2 tablespoons butter
2 large onions
8 to 10 cloves garlic
2 cans (14 ounces each) chicken stock
1 can (24 ounces) chopped green chilies
1 teaspoon celery salt
1/2 teaspoon black pepper 1 teaspoon leaf oregano
1/2 tablespoon cumin
2 diced potatoes
1 pound ground pork
1 pound ground beef
Directions
Brown beef and pork. Saute onion and garlic. Combine with potatoes in stew pot and add broth. Add all seasonings and spices. Simmer over low heat for one hour. Add green chile and simmer for another 30 minutes.
Suggestions
You can also make a less soupy burrito or taco filling by putting all ingredients together at the same time and leaving out the broth.
