Baked French Country Soup
Rhonda Cliett
My children have always disliked beans so I have to find a way to camouflage them in order to get them to eat them. This soup has always been a favorite because it is so tasty that they actually enjoy the beans and always ask for seconds.
Ingredients
1 pound low-fat polksa kielbasa sausage (I use Healthy Choice brand but any other low-fat smoked sausage would be fine)
1 can (15 ounces) Ranch-style beans
1 can (15 ounces) black beans, rinsed and drained
1 can (16 ounces) great northern beans, rinsed and drained
1 can (15 ounces) tomato sauce
3 medium carrots, thinly sliced
1 large onion, sliced into rings
1/2 cup red wine
2 tablespoons brown sugar
1/2 teaspoon garlic powder
1 1/2 teaspoons dried thyme
Directions
Slice sausage into 1/4-inch bite-size pieces. Combine all ingredients in a large bowl and mix well. Pour into a large ungreased baking dish. Cover and bake at 370 degrees F for 50 to 55 minutes or until the carrots are tender.
Suggestions
Serve with crusty French bread.
