Bare Pantry Potato Soup

This is another recipe for those times when you THINK you have nothing
in the house to eat, but don't want to go to the store. This is actually one of my favorite soups, even though the ingredients are so simple.
Ingredients
2 medium potatoes peeled, diced
1 medium onion diced
3 cloves garlic
1 teaspoon celery seed
2 cups vegetable stock or water
1 cup milk
Salt and pepper, to taste
1/2 tablespoon vegetable oil
1 tablespoon butter
Directions
Heat oil in a medium soup pot over medium high heat. Add onion and saute until translucent. Add garlic, stir and add diced potatoes. Saute for two minutes, then add the stock or water. Boil for five minutes then reduce to very low boil. Simmer for 20 minutes, until potatoes are nice and soft, then add warm milk. Crush some of the potatoes against the side of the pan, this will release some more of the starches and thicken the soup a bit. Simmer for 15 minutes.
Suggestions
Garnish with a dollop of butter and some dill. Serve with warm bread.
