Cheeseburger Soup
Ground beef, hashbrowns and vegetables in a cheesy broth.
Ingredients
1 pound lean ground beef
1 onion, chopped
1 rib celery, chopped
2 carrots, grated
3 cups frozen hashbrowns
2 cans chicken broth
1 package (8 ounces) processed American cheese, cut into cubes
1 1/2 cups milk
1/2 cup sour cream
1/4 cup flour
1 teaspoon dried basil
3 tablespoons margarine
Salt and pepper, to taste
Directions
In a Dutch oven, brown the ground beef. Remove. In the same pot cook the celery, onion and carrots in the margarine until soft. Add the chicken broth, potatoes, ground beef, basil, salt and pepper. Bring to boil. Reduce heat and simmer about 10 minutes. Combine the flour and milk until smooth. Add to soup. Cook another two to three minutes. Add the cheese and cook until it just melts. Turn heat off and add sour cream. Do not boil. Season with additional salt and pepper.
Suggestions
For Bacon-Cheeseburger Soup, add some crumbled bacon to the top when serving.
