Chicken and Shrimp Gumbo
A rich gumbo featuring chicken, shrimp and okra.
Ingredients
1 tablespoon flour
1/4 cup vegetable oil
1 cup chopped celery
1 onion, chopped
3 cups canned chicken broth
1 can (16 ounces) chopped tomatoes
1 bell pepper, chopped
1 package (16 ounces) frozen okra
2 cups cooked, shredded chicken
1 pound cleaned shrimp
1/4 teaspoon dried thyme
1/4 to 1/2 teaspoon hot pepper sauce
Salt and pepper, to taste
Hot cooked rice
Directions
Brown the flour in the oil until it is dark brown. Stir this mixture constantly, and do not let it burn! When dark brown, add the celery and onion; cook about five minutes. Add the chicken broth, tomatoes, bell pepper, okra, pepper sauce, thyme, salt, and pepper. Simmer about 30 minutes. Add chicken and shrimp and cook until shrimp is done, about five minutes.
Suggestions
Serve with rice and garnish with fresh snipped parsley.
