Cream of Cauliflower Soup
Ingredients
2 tablespoons butter or margarine
1/2 cup chopped onion
2 ribs celery, chopped
1 1/2 cups chicken broth
1 cup cooked cauliflower, coarsely mashed
1 cup light cream
Salt and pepper, to taste
Directions
Cook the onion in the butter until soft. Add the chicken broth and cauliflower. Bring to a boil. Reduce heat and add the cream. Do not boil. Season with salt and pepper. Garnish with fresh snipped parsley.
Suggestions
Makes two servings.
