Curried Pumpkin Soup
Ingredients
5 cups chicken broth
2 large onions, chopped
1 teaspoon curry powder
1 tablespoon salt
1/2 cup butter
4 cups half-and-half
4 cups pureed pumpkin
Directions
In a large soup pot, saute the onion in the butter until soft. Stir in curry powder and cook about two minutes more. Stir in pumpkin, salt, half-and-half and broth. Stirring constantly, cook over low heat until heated through.
Suggestions
Serve with a warm loaf of crusty French bread.
