Easy Clam Chowder
Ingredients
4 slices bacon
1 small onion, chopped
1/4 cup chopped celery
2 cans (6.5 ounces each) minced clams
1 1/2 cups diced potatoes
1/2 teaspoon salt
1/2 teaspoon pepper
1 can (13 ounces) evaporated milk
Directions
Cook bacon until crisp. Drain fat, reserving 1 tablespoon. Crumble bacon and return to pot. Stir in onion and celery. Cook until tender. Drain liquid from clams, reserving liquid. Add enough water to liquid to make 1 cup. Stir into onion mixture. Add potatoes, salt and pepper. Boil. Reduce heat, cover and simmer 20 minutes or until potatoes are tender. Add clams and milk. Heat through. Serve.
