Gazpacho
A creamy cold soup featuring tomatoes and cucumbers.
Ingredients
2 large tomatoes, chopped
1 small onion, chopped
2 cloves of garlic
1 cucumber, chopped
1 green pepper, chopped
1 can (46 ounces) tomato juice
1 tablespoon Worcestershire sauce
1/4 cup olive oil
1/4 cup wine vinegar
Salt and pepper, to taste
Directions
Put all ingredients into a blender. Pulse to blend. (You might have to do this in batches.) Chill the soup at least three hours, or overnight.
Suggestions
Each bowl can be garnished with additional chopped cucumber or tomatoes.
