Spicy Tortilla Soup
Ingredients
1 small onion, chopped
3 green onions, chopped
1 to 2 jalapenos, chopped fine
3 to 4 garlic cloves, minced
3 tablespoons oil
2 cans (14 ounces) stewed tomatoes
2 cans (10 ounces) tomatoes with green chiles
2 cans (10 ounces) beef broth
2 cans (10 ounces) chicken broth
2 cans (10 ounces) tomato soup
3 cups water
2 1/2 teaspoons cumin
Tortilla chips
Freshly-chopped cilantro
Grated Monterey Jack cheese
Directions
Heat the oil in a large soup pot. Cook the onion, green onion, jalapenos and garlic until tender, stirring constantly. Add the stewed tomatoes, tomatoes with green chiles, beef broth, chicken broth, tomato soup, water and cumin. Bring to boil, reduce heat, cover and cook one hour.
Suggestions
To serve, ladle soup into individual soup bowls. Top with crushed tortilla chips, cilantro and cheese.
