Chicken Soup
1 4-pound chicken, cut into fourths or eighths
3 quarts cold water
3 carrots
2 stalks celery with leaves
1 parsnip
1 turnip
1 sweet potato
1 large onion
1 zucchini
A few sprigs of parsley and dill
Salt and pepper to taste
directions
Wash and clean chicken thoroughly, place in bottom of pot. Peel vegetables and place over the chicken. Add water and bring to a boil. Skim the fat when it rises to the top. After the soup boils, add salt and pepper and then parsley and dill. Simmer on low flame for 1 ½ to 2 hours.
