Soy Tomato Soup

A healthy soup made with tofu and soymilk.

1 package (10.5 ounces) soft silken tofu
1 tomato, diced
2 teaspoons oil
1 onion, diced
1 cup soymilk
1 teaspoon minced garlic
1 teaspoon fresh basil, chopped
½ teaspoon salt
Pepper to taste


directions
Heat the oil in a skillet. Sauté the onion until soft, about 5 minutes. Add the diced tomato and minced garlic and cook another 3 minutes. Add the soymilk, basil, salt and pepper. Heat through. Remove from heat and add in the tofu. Blend the soup until smooth.

suggestions
This soup can be served hot or cold. Makes about 4 servings.
