Berry Trifle
Recipe courtesy of Southern Comfort
Ingredients
Trifle:
1 whole pound cake
2 cups sugar
1 cup Southern Comfort
2 cups berries (mixed seasonal)
1 quart whipped cream
Fresh mint to garnish
Directions
In a bowl, add sugar, 1/2 cup of the Southern Comfort, and stir until blended. Add berries and gently toss, until berries are covered. Cut pound cake into small pieces and moisten with 1/4 cup of Southern Comfort. Place into glasses in layers: pound cake, berries then Southern Comfort whipped cream. Repeat until the layers fill the glasses. Leave a parfait or layered effect. Garnish the top with the Southern Comfort whipped cream. Complete by garnishing with the mint.
Whipped Cream: In a mixing bowl, add the heavy cream, sugar, whipping until almost tight, slowly adding 1/4 cup of Southern Comfort. Continue to whip until the cream peaks.
