Cajun Mojo Shrimp

Ingredients

10 jumbo shrimp, peeled and deveined
2 jalapeno peppers, sliced lengthwise
10 slices of apple smoked bacon
1/2 cup blackening seasoning
2 wooden skewers
2 ounces olive oil
1/2 cup Southern Comfort
1 cup heavy cream
2 ounces smoked ham, finely diced

Directions

Butterfly the shrimp and place a jalapeno pepper in each of the shrimp. Wrap the apple smoked bacon around the shrimp and the jalapeno and slide on wooden skewers. Place oil in a dish and roll the skewered shrimp in oil.

Place blackening seasoning in a separate dish. Now roll the skewers in the seasoning. Place the skewers in a hot skillet and turn until golden brown. Place in a hot oven and cook at 325 degree F until bacon is cooked. Do not over cook. Remove the cooked shrimp and set aside in a serving dish.

Quickly add the Southern Comfort and ham to the skillet, boiling mixture to remove alcohol. Add the heavy cream and return to a boil. Serve sauce over shrimp.
