Smokey Oriental Chicken
Chicken marinated in schnapps, soy sauce and garlic!
Ingredients
2 2-pound chickens, split in two
2 tablespoons peach or apple schnapps
3 ounces chicken broth
1/4 cup vegetable oil
1/4 cup soy sauce
1 clove garlic, crushed
Salt and pepper
Directions
Combine the peach or apple schnapps, chicken broth, vegetable oil, soy sauce and garlic in a shallow pan. Cut slits in the chicken skin, then place in marinade. Cover and refrigerate at least one hour, or overnight.
When ready to prepare chicken, drain the marinade and reserve. Season the chicken with salt and pepper. Place the chicken on a broiler rack and broil 4 inches from the heat source for about 30 to 40 minutes, turning every 10 minutes and basting with marinade. Cook until well browned and crispy.
Suggestions
To serve, cut into serving size pieces. Can be served with Ranch dressing or honey mustard for dipping.
