Baked Spinach and Noodles
A calcium-rich dish!
Ingredients
8 ounces medium egg noodles
2 cups plain, low-fat yogurt
1 cup cottage cheese
2 packages (10 ounces each) frozen spinach, thawed and squeezed dry
1/2 cup chopped onion
1 cup grated cheese (cheddar, mozzarella, Swiss or Monterey Jack)
Directions
Cook egg noodles according to package directions; drain. In a bowl, combine the yogurt, cottage cheese, spinach, onion and cooked noodles. Mix well. Pour into a lightly greased 2-quart baking dish. Top with the grated cheese, cover and bake at 350 degrees F for about 25 minutes. Uncover and continue baking about five minutes more.
Suggestions
Serve as a side dish with roasted chicken, pork or beef. This dish also makes a wonderful vegetarian main dish.
