Broiled Eggplant Parmesan
The eggplant is broiled, not fried!
Ingredients
2 medium eggplants, cut into slices
Salt and pepper to taste
Olive oil cooking spray
1 jar (16 ounces) marinara sauce
1/2 cup chopped, fresh basil
2 cups grated mozzarella cheese
1/2 cup freshly-grated parmesan cheese
Directions
Preheat broiler. Spray a broiler pan with olive oil spray.
Season the eggplant with salt and pepper, then spray lightly with olive oil spray. Arrange on the broiler pan. Broil for three to five minutes on each side or until lightly browned. Place in a baking dish. Set aside.
Heat the marinara sauce in a saucepan. Add the basil, and cook about one minute. Spoon over the eggplant. Top with the mozzarella and parmesan cheese. Broil just until cheese melts.
Suggestions
Serve with additional grated parmesan cheese.
