Spicy Veggie Wraps
Ingredients
1/2 cup each cut into bite-size pieces: broccoli florets, cauliflower, red bell pepper, green bell pepper and onion
3 cloves garlic, minced
2 tablespoons soy sauce
1 teaspoon cumin
1 teaspoon oregano
1 tablespoon water
Black pepper, to taste
Flour tortillas, warmed
Directions
Mix the soy sauce, cumin, oregano, black pepper and water together. Pour over the chopped vegetables. Marinate about five minutes.
Heat a skillet to high heat. Add a small amount of oil to the bottom. Add the vegetables, stirring constantly, until crisp-tender.
Add about half a cup of the vegetable mixture in the center of each flour tortilla. Roll up. Secure with a toothpick, if desired.
Suggestions
Serve with pico de gallo, salsa, guacamole, shredded cheddar cheese and sour cream, if desired.
