Zucchini Cutlets

1/2 cup grated carrot
1/2 cup chopped onion
1/4 cup chopped red pepper
1/4 cup chopped green pepper
2 cups fine soda cracker crumbs
1/4 cup all-purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
1/8 teaspoon pepper
3 cups grated zucchini, with peel
2 large eggs, beaten
2 tablespoons oil
directions
Combine the carrot, onion, red pepper, green pepper, cracker crumbs, flour, baking powder, salt and pepper in a bowl. Mix well. Add zucchini and eggs. Mix again. Shape into patties, using about 1/4 cup for each one.

Heat the oil in a skillet. Brown the patties on both sides. Serve with sour cream and salsa.

suggestions
Tammy's Tip: When you have surplus of zucchini, grate it up and divide it into containers of 3 cups and freeze it so that you can enjoy these all year long!
